Piña Colada Cookies
Monkey Butter - Ooo ooo goood
100 g | 0.5 c Crushed Pineapple
50 g | 0.5 Banana
5 g | 1 tsp Lime Juice
30 g | 2 Tbs & 1 tsp Sugar
3 g | 1 tsp Tapioca Starch
1) Combine the pineapple, banana, and lime juice in a small pot and place over medium high heat.
2) Whisk the sugar and tapioca starch together and add to pot once the banana has broken down into the pineapple. (Mixing the tapioca starch and sugar ensures that your starch will not clump when being added to the boiling mixture.)
3) Mix quickly and cook for about 1 minute to thicken.
The Monkey Butter shouldn’t be runny. Look for it to cling loosely to your spatula momentarily.
4) Divide evenly between all the cookies.
Coconut Thumbprint Cookies - Leave your mark
Yields ~13 Cookies
35 g | 0.3 c Shredded Coconut
32 g | 0.3 c Coconut Flour
20 g | 2.5 Tbs Sugar
1 g | 0.3 tsp Baking Powder
A pinch of Salt
32 g | 0.25 c Banana Chips
0.5 Lime Zest
50 g | 0.25 c Coconut Oil
1.5 Banana
1) Preheat the oven to 350° F
2) Microwave the banana and coconut oil for about 30 seconds until the oil is melted and the banana is soft.
3) Mash the banana into oil and add the lime zest.
4) Chop or crush banana chips into small pieces.
5) Add all ingredients to the bowl and mix until no dry spots remain.
6) Let it sit for 5 minutes.
LET THE DOUGH SIT
This helps hydrate the mixture and bind everything together.
7) Scoop the cookies onto a parchment covered tray. (These cookies don't spread much so they can be fairly close together.)
8) Press your thumb into the centers and fill the prints with Monkey Butter.
Don’t worry if your dough breaks apart as you make your thumbprints. You can easily reshape them to look nicer if you’d like.
9) Bake for about 15 minutes until the bottoms are golden.
10) Finish by drizzling with Lime Glaze.
Lime Glaze - Easy Peasy Lime… Sqeezy?
0.5 Lime Zest
60 g | 0.5 c Powdered Sugar
5 g | 1 tsp Lime Juice
5 g | 1 tsp Evaporated Coconut Milk
1) Mix everything together and you are ready.
No piping bag, No problem. Simply use a sandwich bag and cut a very tiny hole in the corner with a pair of scissors.
